10 lb. Pork Shoulder Roast, lean as possible

pepper
oregano
1/4 c. olive oil
1/4 c. vinegar
garlic paste or make your own
1 lemon

Directions:
Directions:
Wash the pork and then squeeze a lemon over it.
Stab many deep holes in the pork and fill with salt and pepper. Rub the garlic paste over the roast. Sprinkle some salt and pepper over the top. Add the olive oil and vinegar. Springle with oregano and marinate for up to 2 days--one day will so if you are in a rush. Bake from @300 to @350 for 4-5 hours. During the last hour baste it.
