1 lb stew meat
2 Tbsp flour
1/2 tsp pepper
1/2 tsp salt
2 Tbsp vegetable oil
1 c onions
1 lb potatoes
2 medium carrots
1 clove garlic
1/2 c tomato sauce or juice
4 c beef broth

Directions:
Directions:
Season the beef with salt and pepper, then coat with flour. Heat the oil in a skillet. Add the beef and cook until browned. Peel and dice vegetables.
Place the onions, potatoes, carrots, and garlic in a 3 1/2-quart slow cooker. Top with the beef. Mix the tomato sauce, and broth, pour into the slow cooker. Cover and cook on *LOW 8 to 10 hours or until done.*Cook in crock pot on HIGH 4 to 5 hours or to make in a stock pot, simmer 2 - 3 hours. Serve with the sour cream and chopped green onions, if desired
