2 c. flour
2 c. sugar
1/2 c. cocoa
1 1/2 t. baking soda
1 c. boiling water
1 t. salt
2 eggs
1 c. buttermilk
7/8 vegetable oil

Directions:
Directions:
Mix all ingredients into bowl. Add 1 cup boiling water to mixture. Mix 2 mins on medium speed.
Back at 350 degrees for 20-25 mins. Cool and top with frosting of your choice.

Do not attempt a double batch of these. Make two separate batches if you want 48 cupcakes. This is according to my daughter. I have never felt the need for 48. So, I am not exactly sure what happens that this recipe is not successful when doubled.
