1 small red pepper, chopped
1 small onion, chopped
4 small zucchini, thinly sliced
1/2 c. spaghetti sauce
3/4 c. mozzarella cheese, shredded
2 tbsp. grated Parmesan cheese

Directions:
Directions:
Cook and stir peppers and onions in large nonstick skillet sprayed with cooking spray on medium heat for 5 min. Add zucchini; cook and stir 2 min.
Stir in spaghetti sauce; cover and cook for 8 minutes, or until vegetables are crisp-tender, stirring occasionally.
Sprinkle with cheese; cook, covered for about a minute or until cheese is melted.
