1 cup oil
2 cups sugar
2 tsp. vanilla
2 cups shredded zucchini
3 eggs
1/2 tsp. cinnamon
3/4 tsp. nutmeg
3 cups flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
nuts, chopped

Directions:
Directions:
Mix first four ingredients until thick. Stir in remaining ingredients until well mixed. Pour into two 9x5 loaf pans sprayed with Pam. Bake at 325 for 1 hour. Check with toothpick.
