6 tbsp. margarine, softened
3/4 cup sugar
1 egg
1 tbsp grated lemon peel
1tsp. vanilla extract
1/2 cup milk
2 cups flour
1 tbsp. baking powder
1/4 tsp. salt
3 ripe large bananas, sliced
Streusel topping

Directions:

1. Beat margarine and sugar in large bowl until light and fluffy. Beat in egg, lemon peel, and vanilla until smooth. Stir in milk.

2. Combine flour, baking powder, and salt in medium bowl; add to margarine mixture, stirring until blended. Fold in bananas.

3. Spoon batter into well greased 9-inch square baking pan; smooth top. Sprinkle with streusel topping. Bake in 375 degrees oven 45 to 50 minutes until toothpick inserted in center comes out clean. Cool 20 minutes before cutting.

4. Streusel Topping: Combine 1/3 cup packed brown sugar, 1/3 cup flour, and 3/4 tsp. cinnamon. cut in 1/4 cup margarine until mixture is crumbly.
