2 c. water
1 3/4 c. quick oats
1 lb. diced dried apricots
1 c. shortening
1 c. packed brown sugar
1 c. brown sugar
1 3/4 c. flour
1 tsp. baking soda

Directions:
Directions:
Heat the water, apricots and brown sugar to a boil and simmer till apricots are soft and mushy, about 1 hour. Stir occasionally. Cool. Mix the oats, flour, shortening, brown sugar, and soda. Set aside 2 c. of the crumbs for topping. Press the remaining in a greased 9X13 inch pan, press firmly. Pour the apricot mixture over and then the remaining crumbs. Press down. Bake @ 350º for about 35 minutes. Cool before cutting.
