3 eggs, lightly beaten
ham
turkey
onion
tomato
mushrooms
bell pepper
shredded cheese

Directions:
Directions:
Coat the bottom of a large, lightly greased skillet with 1 pat of butter, add the eggs, and cook over medium heat until slightly firm. Rotate skillet to help set eggs, and keep from scorching. Top with your choice of fillings. Fold egg in half over fillings, and serve warm.
