2 lbs ricotta cheese
1/2 c Romano cheese, grated
2 T dried parsley
1 t salt
1/2 t garlic powder
1/2 t pepper
4 eggs
1 box manicotti noodles
4 c spaghetti sauce

Directions:
Directions:
Mix first seven ingredients together. Using a spoon or butter knife, stuff cheese mixture into uncooked manicotti noodles. Place side by side ( a few will form another layer on top) in a 9x12 inch glass or ovenproof baking dish. Pour about 2 or 3 cups spaghetti sauce evenly over noodles, reserving 1 Cup sauce for serving. For an optional but delicious extra touch, sprinkle 1 pound grated Mozzarella cheese on top.

Cover with aluminum foil. Bake at 350º for about 40 to 45 min, or until noodles are fork tender
