1 lb lean Ground Beef
Salt and Pepper
1 T Chili Powder
1/2 tsp Oregano
1 med Onion, chopped
1/2 med Red Pepper, thinly sliced
15 oz Mexican-seasoned diced Tomatoes
15 oz Chili Beans, undrained
1 C Corn
1 C shredded Monterey Jack Cheese
8 1/2 oz pkg Muffin Mix
1 Egg
1/3 C Milk

Directions:
Directions:
Preheat oven to 375º. Lightly butter a 2 qt casserole dish. In a large skillet, brown the beef. Sprinkle with salt and pepper. Add chili powder, oregano, onion and red pepper. Cook until onion is tender. Add tomatoes, chili beans and corn. Heat through. Spoon in casserole dish and top with cheese. In a separate bowl, combine muffin mix with egg and milk and stir. Drop muffin mix on top of casserole and cover completely. Bake for 20 to 30 minutes or until muffins are cooked through and lightly brown on top.
