Ingredients:  
3 bell peppers (you can use any three of the following – red, yellow, green, orange), finely chopped
1 small red/purple onion, finely chopped
1 can shoepeg corn, drained
2 cans black beans, drained and rinsed

½ cup sugar
½ cup cider vinegar
½ cup olive oil

Directions:
Directions:
Chop 3 peppers and onion. Add corn and black beans. Mix sugar, vinegar and oil and heat on stove until sugar is dissolved. Pour over mixture, seal and refrigerate for at least 3 hours before serving. Serve with tortilla chips.
