1 - 3 oz pkg. Apricot Jell-O
1 flat can crushed pineapple
1/3 cup apricot nectar
1/3 cup sugar
1 - 8 oz pkg. cream cheese
1 cup Cool Whip
1 cup shredded carrots
1 cup choppen pecans

Directions:
Directions:
Combine pineapple undrained and sugar; bring to a boil. Add Jell-O and stir until dissolved. Remove from heat. Add cream cheese (which can be softened in microwave, watch carefully). Stir until cream cheese melts. Add nectar, carrots, and pecans. Mix well. Fold in Cool Whip. Refrigerate.
