2 lbs lean ground beef
1 small can tomato sauce
1/2 c onion
1/4 c picante sauce
1 c cracker crumbs*
2 eggs
3 tsp yellow mustard
Velveeta© cheese
1 can tomato sauce

Directions:
Directions:
In a large bowl, combine ground meat, tomato sauce , chopped onion, cracker crumbs, eggs, picante sauce and mustard. Mix well. Press half into a baking dish, layer with sliced Velveeta© cheese and top with remaining meat. Pour second can of tomato sauce on top of meatloaf. Bake in a preheated 350º oven for 1 hour or until done. *We've used saltines, Ritz©, Cheez-its©, or even oatmeal.
