5 eggs slightly beaten
1 lb. cottage cheese
8 oz. grated Monterrey jack cheese
1 10 oz. box frozen chopped spinach
1/2 C. matzah meal

Directions:
Directions:
Defrost and drain spinach and add the rest of the ingredients one at a time; mix well.
Pour into greased quiche pan, and bake at 350º for about one hour.
Makes 6 generous wedges.

This is a great meal during Passover if you like spinach and cheese! It is easy to make and doesn't have much to it. Enjoy!
