1 lb.raw shrimp
3 tbs. butter
3/4 c. chopped onion
3 small ribs celery, chopped
1 green pepper chopped
3 cloves garlic, finely chopped
2 c. canned tomatoes
2 sprigs fresh thyme or 1/2 t. dried
1 bay leaf
Tabasco sauce
1/2 tsp. grated lemon rind
salt and ground pepper to taste
2 tbs. chopped parsley
Juice of 1/2 lemon

Directions:
Shell and devein shrimp. Melt butter in saucepan and add onion. Cook, stirring until onion is wilted. Add the celery, green pepper and garlic. Cook briefly, stirring. Add tomatoes, thyme, bay leaf, Tabasco sauce to taste, lemon rind, salt and pepper. Simmer 10 - 15 minutes uncovered. Add the shrimp and cover. Cook until shrimp turn pink. Add parsley, lemon juice and more Tabasco if desired.
