1 lb. boneless, skinless chicken thighs
4 garlic cloves
1/2 red bell pepper, finely chopped
1 to 2 jalapeno pepper, finely diced
1/2 tsp. salt
1 tsp. southwest chipotle seasonings
1 tsp. lime pepper seasoning
1 cup grated cheddar cheese
1/2 cup toasted pine nuts
2 cups seasoned croutons, processed into crumbs

Directions:
Directions:
Place garlic in a food processor until finely minced. Add chicken, until ground. Remove and place mixture in large bowl. Combine pine nuts, cheddar cheese, pepper, jalapeno, and remaining seasonings. Mix well. Form into balls. Roll in crouton crumbs. Line baking sheet with foil and place chicken on top. Broil on high 3 to 5 minutes. Serve hot.
