2 c. asparagus
1 tbsp butter
2 scallions, thinly sliced
1 clove of garlic, minced
1/4 tsp dried thyme
1 c. ricotta
4 eggs
1/4 c. shredded gruyere
2 tbsp chopped parsley


Directions:
Directions:
Fry scallions, garlic, salt, pepper, thyme and asparagus until tender.
Meanwhile, in a bowl, whisk ricotta with eggs until smooth, stir in cheese and parsley. Pour into skillet or pie dish with asparagus mixture.
