Approx 1 kg Small Potatoes
6 hard boiled eggs
1 Red Onion
2 good cloves Garlic
1 tbsp sugar
Olive Oil
1 cup Frozen Peas
1/4 cup chopped Red Capsicum
1/4 cup chopped shallots or chives
100gms Sour Cream
100gms Mayonnaise
Salt and Pepper to taste
6 snow peas

Directions:
Directions:
Cut Potatoes into 1/4 pieces, boil in salted water until just soft. Chop Onion and garlic finely and cook in Olive Oil, adding salt to taste and sugar, cook until onion translucent. Cook peas until tender.
In a large bowl mix all cooked ingredients together with chopped eggs, capsicum, shallots. Mix together the sour cream and mayonnaise through potatoe ingredients. Add salt and pepper to taste. Place in fridge to cool down before serving. Prior to serving, cut snow peas lengthwise finely and scatter over salad for garnish.
