2 Tbs. Chopped Green Onion
1/2 lb. sliced fresh mushrooms
4-6oz. 1 inch thick Chilean Sea Bass Filets
1/4 Cup Dry White Wine
Salt & Pepper
Pkg. of Hollandaise Sauce
Chopped Fresh Parsley for Garnish

Preheat oven to 425º. Butter a baking dish that will accommodate filets in a single layer. Sprinkle the green onions evenly over the bottom of the baking dish and then do the same with the sliced mushrooms. Rinse the Sea Bass and pat dry with paper towels. Lay the filets over the mushrooms and pour the wine over. Sprinkle with Salt and Pepper. Cover and bake until opaque through out when cut with a knife, about 10-15 minutes. Meanwhile prepare package of Hollandaise sauce. Spoon the sauce over the filets and broil until lightly browned. Sprinkle with parsley and serve immediately.
