4 medium sized potatoes, peeled
1 small onion, peeled
4 green onions
1 clove garlic, chopped
3 Tablespoons butter or margarine, melted
3 cups chicken broth
3/4 cup whipping cream
1 cup milk
3/4 teaspoon salt
Dash white pepper
Dash nutmeg

Directions:
Directions:
1. Cut potatoes into eighths, cut onions into eighths. Coarsely chop the green onions. Add green onions and garlic to butter in heavy 3 quart saucepan. Add the onion and sauté for 1 minute. Add the potatoes and broth.

2. Simmer for 20 minutes or until potatoes are tender.

3. Purée in food processor or blender in small batches.

4. Add cream, salt, pepper and nutmeg. Chill if serving cold or reheat.

Garnish with croutons, chopped chives &/or bacon.

2 servings halve the ingredients
8 servings double everything except whipping cream - only use 1 1/4 cups.
