"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Tomato Gravy, by Lori Shepherd, is from Recipes from the Crossroads,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 can of whole tomatoes 2 Tbsp drippings from fried pork chops Water 2 heaping tbsp all purpose flour 1 tsp sugar Salt & pepper to taste
Drain can of tomatoes and chop tomatoes placing in a bowl. After frying pork chops save about 2 Tbsp of drippings. Add flour and tomatoes, constantly stirring, cooking over medium heat for about 1 minute. Add water to desired consistency (about 2 cups). Add sugar, salt and pepper. Simmer for another minute. Serve over rice. My girls' favorite!
