1 medium potato
1 medium yam
2 medium fresh beets
2 . canola oil
2 T. grated Parmesan
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. oregano

Directions:
Directions:
Peel vegetables, cut into 1/8 inch slices. Place in large bowl. Drizzle with oil. Combine remaining ingredients; sprinkle over vegetables and toss to coat. Arrange in single layer in 2 ungreased 15x10" pans. Bate at 375 for 15-20 minutes or until golden brown, turning once.
