4 Salmon fillets
4 tbsp. olive oil or melted butter
4 tbsp. FRESH tarragon (this is one of the herb's in our garden)
2 tsp. green peppercorns (can use less if you prefer)
1 tomato
1 cup sliced mushrooms
salt and pepper to tast
1 cup whipping cream

Oil a baking pan large enough to hold your salmon fillets in one layer. Brush fillets with butter/oil and bake at 450 degrees for 8-10 minutes.

Put remaining butter/oil in a large saute pan. Add mushrooms and saute for 2 minutes. Add chopped tomato, green peppercorns and tarragon. Warm through about 1 minute. Add cream and reduce for 3-5 minutes. Salt and pepper to taste. Pour over salmon.
