2 x chopped fresh Beetroot around 1cm square
Salt and pepper to taste
Water to cover beetroot
2 heaped tablespoons Sunshine Mango Jam or substitute another jam
2 heaped tablespoons sugar
Basil (dry or fresh) to taste
Garlic to taste
Rosemary (dry or fresh) to taste

Directions:
Directions:
Chop beetroot into around 1cm pieces, put into saucepan and just cover with water, add salt, pepper, jam, sugar and herbs. Bring to the boil and then cook over a low heat until reduced down to a thick consistency. Use as a side dish for Rack of Lamb or to accompany any meat dish. Can be blended into a smooth consistency if desired.
