1 tbsp Olive Oil
1 tbsp Butter
1 Shallot
2 Cloves Garlic
3/4 lbs Mushrooms
1 1/2 cup White Wine
Juice of 1 Lemon
1 cup Chicken Broth
Salt and Pepper to taste
1 tbsp corn starch mixed with 1 tbsp cold water

1 lb Thin Sliced Boneless Chicken Breast
House Seasoning (see recipe in "Marinades and Rubs" section)

Directions:

Chop and saute shallot and garlic in 1 tbsp Olive Oil
1 tbsp Butter. Add in sliced mushrooms. After few minutes add in the lemon juice. When absorbed, add in the white wine and chicken broth. Add salt and pepper to taste. Thicken with 1 tbsp corn starch mixed with 1 tbsp cold water. Turn to low while chicken is cooking.

On an indoor or outdoor grill on med-high heat, grill chicken seasoned with the house seasoning.

Serve sauce on top of chicken.
