28 green mangoes peeled and chopped finely
750 grams raisins
250grams preserved ginger chopped finely
500grams dated chopped finely
100grams chopped garlic
5 cups brown sugar
3 finely chopped chillies( birds eye) optional
1 tablespoon salt
2 litres brown vinegar

Directions:
Directions:
Boil sugar and the vinegar to a syrup add the other ingredients and bring to boil for five minutes, then simmer and stir uncovered until you have a nice consistency.
The colour should be brown, let it cool then bottle in sterilised jars. Will keep for a few months.
