2 (14ounce) packages of shredded hash browns
2 cups shredded Colby cheese
2 (5 ounce) packages of shredded Swiss cheese
1 large onion, minced
2 teaspoons minced garlic
2 cups milk
1 (10-3/4) cans cream of chicken soup
2 tablespoons butter melted
2 teaspoons salt
1 teaspoon black pepper

Directions:
Directions:
Combine hash browns and next 4 ingredients in a large bowl.Stir together milk and next 5 ingredients; pour over hash brown mixture. Pour into a lightly greased 13 x 9 inch baking dish.
Bake at 350 degrees for 45-55 minutes until golden brown.

Pepper Jack Potato casserole: Omit the Colby, Swiss cheeses and onion. Substitute 2 8 ounces packages of Monterey Jack cheese with peppers, shredded. Proceed as directed.
