1-1/2 cups unpeeled zucchini, grated (press between paper towel to dry)
2 tbsp. grated or finely chopped onion
1/4 cup Parmesan cheese
1/4 cup flour
2 eggs
2 tbsp. mayonnaise
1/4 tsp. dried oregano
Garlic powder, salt and pepper to taste
2 tbsp. butter or margarine

Directions:
Directions:
1. Mix zucchini through seasonings together.
2. Melt butter in a skillet.
3. Spoon mixture (approximately 2 heaping tbsp. each) into skillet. Flatten with spatula.
4. Cook over medium heat until browned on both sides.
5. Serve plain or top with tomato sauce and grated cheese or sour cream and chives.
