4-5# lean beef, cooked and cut in bit size pieces (slow cooked in crock pot with 1 pkg. Au jus, 1 pkg. Italian dressing, and 1 can beef broth)
2 qt. Water
3 qt. Beef broth
2 qt. Tomato juice
2 1/2 c. corn
10 c. potatoes
8 c. carrots
2 1/2 c. celery
3 1/2 4 c. onions
2 1/2 c. green beans
1 c. barley (1/2 box)
1/4 c. parsley flakes
2 1/2 tsp. Beau Monde seasoning
4-5 oz. beef soup base
5 tsp. salt
1 1/2 tsp. pepper
1 1/2 lb. Frozen mixed vegetables

Chop vegetables to the size you like. Mix all ingredients. Bring to a boil and simmer until vegetables are done. Add meat toward the end of the cooking time.

This is my aunt's recipe (Jeanie Bormann Laubenthal) and often used for Whittemore church fundraisers. Makes a roaster full. Freezes well too.
