1 1/2 pounds potatoes - cut into 1/2-inch chunks
1/2 c mayonnaise
1/8 - 1/4 c prepared yellow mustard
1 celery stalk - diced
1/4 c finely chopped onion
2 hard boiled eggs - chopped
Salt and ground black pepper to taste

Directions:
Directions:
Fill a Dutch oven with water and bring to a boil. Cut potatoes into 1/2-inch cubes. Add to boiling water; cook until tender, about 10 minutes. Meanwhile, combine mayonnaise, mustard in a bowl. Add remaining ingredients; mix well. Drain and rinse potatoes under cold water. Add to ingredients in bowl; mix gently. Season with salt and black pepper. Refrigerate until ready to serve.
