2 eggs
1/4 c. lemon juice
1 c. sugar
2 TB. grated lemon peel
6 TB. melted margerine

Directions:
Directions:
In a double boiler, beat eggs and sugar. Stir in butter, lemon juice and peel. Cook and stir over simmering water for 15 minutes, till it reaches 160º and is thick. Cover and chill. Serve with blueberry scones. Also yummy over pound cake with fresh strawberries.
