2/3 c. vegetable oil
1 c. chopped onion
2 tsp. minced garlic
2 tsp. flour
2 tbsp. evaporated milk
2 cans diced tomatoes with green chilies
2 c. velveeta
1 1/2 lb. Monterey Jack cheese, shredded
10 oz. chopped frozen spinach
1/4 c. butter

Directions:
Directions:
Heat oil in saucepan. Add onion and garlic. Saute until onions are translucent. Stir in flour; remove from heat. Slowly mix all remaining ingredients except spinach and butter. Cook on low heat until thick and smooth. While queso is cooking, saute spinach in butter until well done. Drain well and add to queso. Serve with tortilla chips.
