6 Roma tomatoes
1 tsp. salt
3 cloves garlic
1/4 c. olive oil
6 finely chopped basil leaves
1/4 tsp. cracked pepper
1 loaf crusty Italian bread
1/4 c. olive oil, this will go on the bread
1/2 c. Parmesan cheese
pine nuts

Directions:
Directions:
Cut tomatoes in half. Remove seeds. Dice tomatoes and put in a colander. Sprinkle with salt and allow to weep a minimum of 30 minutes, up to overnight. Add 3 garlic cloves, 1/4 c. olive oil, basil leaves, and cracked pepper to tomatoes and let weep while preparing the bread.
Cut loaf of bread into thin slices. Mix olive oil, Parmesan cheese, and pepper, and Parmesan cheese. Place bread slices on cookie sheet and spread with Parmesan mixture. Bake at 350º for 10 minutes. Place on serving dish and top with tomato mixture. Top with pine nuts.
