Ingredients: For each Burrito
1 12 inch flour or whole wheat tortilla 2 scrambled eggs 3 pieces crisp,crumbled bacon 1/2 cup grated Jack Cheese 1/2 cup refried beans, warmed 3/4 cup Tomatillo or red enchilada sauce 1/2 cup fresh or store bought salsa resca 1/4 Sliced Avocado *Salsa Fresca and Tomatillo sauce in sauce section

Directions:Heat tortilla on a griddle or large fry pan until just soft.
Move tortilla to work surface or oven proof plate. Put half the cheese in a line in center of tortilla. Sprinkle with bacon, spoon eggs and beans along same line keeping at least 1 inch from edge of tortilla. Wrap bottom half of tortilla over egg mixture, fold sides in and over. Roll bottom fold over remaining tortilla so you have a big fat cigar, with neatly tucked in edge. Place on oven proof oval plate, or cookie sheet, pour over enough sauce to just cover and puddle on plate. Top with other half of the cheese, bake until cheese is melted, and sauce bubbles. Top with fresh salsa and a fan of 1/4 sliced avocado. |
