2 eggs
2 cups + 2 Tbsp. flour
2 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
1 cup oil
2 cups sugar
3/4 cup walnuts
4 cups grated apple

Directions:
Directions:
Preheat oven to 350

Sift together flour, cinnamon, soda & salt
Beat eggs, add sugar & oil and mix well.
Add sifted dry ingredients, apples & nuts.

Spread in a greased & floured 13"x9"x2" cake pan.

Bake for 45 minutes or until cake tests done. Let cool on a wire rack.

Once cake is cool serve with a dusting of confectioners sugar or with a cream cheese frosting.
