4 cups flour
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons baking powder
1/4 teaspoon salt
1 1/4 cups sugar
1/3 cup vegetable oil
1 tablespoon lemon zest
2 tablespoons lemon juice
4 egg whites
2 cups skim milk

Preheat oven 350º
In a large bowl combine first 4 ingredients; set aside
In a separate bowl combine oil, sugar, lemon zest, and lemon juice
Add egg whites and milk and blend well
Fold dry ingredients into the liquid mix until just blended
The batter can look a little lumpy
Fill muffin cups 3/4 full and bake for 20-25 minutes
