Ingredients: 2 cups grated Colby Jack cheese, divided 1 pkg frozen hash browns (10 patties) 8 ounces cream cheese, softened 12 eggs 8 ounces thickly sliced deli ham 4-5 green onions, divided (1 cup sliced) 3 plum tomatoes salt and pepper, to taste

Directions:Preheat oven to 450º. Lightly spray casserole pan with Pam (or Pampered Chef Large Bar Pan) Crumble hash browns over bottom of pan (this is easier to do if the hash browns are almost thawed out before crumbling) Sprinkle half of the cheese evenly over the hash browns, Bake 13-15 minutes or until crust starts to brown and the cheese is melted. Whisk cream cheese until smooth and gradually add eggs, salt and pepper. Whisk until smooth. Chop ham and add 3/4 cup onions and saute until hot. Stir ham mixture into the egg mixture and pour onto browned hash browns. Return to oven and bake for 6-8 minutes or until center is set. Top with remaining cheese, onion, and chopped tomatoes. |

Notes: To soften the cream cheese, microwave for 15-20 seconds. 2 cups of cooked, crumbled sausage or one lb crumbled bacon can be substituted for the ham in this recipe. My children and grandchildren do not like tomatoes or green onions so I leave these off.
