1/2 cup extra virgin olive oil
2 small onions
2 garlic cloves finely chopped
2 celery stalks finely chopped
2 carrots peeled and finely chopped (i leave these out)
1/2 tsp sea salt, plus more to taste
1/2 tsp pepper
2 32 oz cans crushed tomatoes
2 dried bay leaves

In a large pot saute onions and garlic in olive oil for about 10 minutes. Add celery, carrots and salt and pepper. Saute until all veggies are soft about 10 minutes. Add tomatoes and bay leaves and simmer uncovered over low heat until sauce thickens, about one hour. Remove and discard bay leaves. Salt and pepper to taste.
