1 1/2 lb ground beef 1 large onion - diced 1/2 bell pepper - diced 2 stalks of celery - diced 1 1/2 tsp salt 1/2 tsp pepper 3 1/2 c tomato juice 3 c dry egg noodles 1 cup shredded cheese - or - 4 slices sandwich cheese
Brown meat with onion in a Dutch oven. Drain off excess fat. Add the chopped bell pepper, and celery. Stir in seasonings, noodles, and tomato juice. Cover with lid and simmer for 30 minutes, stirring occasionally. Sprinkle cheese on top, cover pan and turn off heat. Serve as soon as cheese melts.
