Ingredients: 1 Bag of Small Red Potatoes (enough to fill a casserole dish 3/4 full) 1/2 Stick of Butter 1 Bunch of Green Onions 1 Small Block of Medium Cheddar Cheese 1 Small Block of Monterey Jack Cheese 1 Small Block of Mozzarella Cheese (can use pre-grated if desired) 1 lb Bacon of your choice Salt & Pepper to taste

Directions:Cut up bacon, fry and set aside on paper towel Cube red potatoes and boil in salted water, al dente While potatoes are cooking Chop green onions and set aside Grate all three cheeses an set aside When potatoes are cooked, but still firm Drain and set aside Butter the bottom and sides of casserole dish and begin layering First a layer of potatoes Sprinkle with salt & pepper Add a layer of all 3 cheeses, covering potatoes Add a generous amount of bacon bits Sprinkle with chopped green onions Then repeat the layers until all ingredients are used. The final step is to take the remaining butter and place 4-5 pats on the top. Bake at 350 for 1 hour. Let set for 10 minutes before serving. |
