4 boneless chicken breasts
flour for dredging
5 tablespoons butter
2/3 cup minced scallions
1 garlic clove, minced
½ cup dry white wine
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon lime juice
2 teaspoons lime zest
1 tablespoon chopped parsley
1 tablespoon fine dry bread crumbs

Preheat oven to 400. Dredge chicken in flour and brown in butter 3 minutes per side. Place chicken in casserole dish. In skillet, add garlic and wine and boil. Reduce by ½, 2 to 3 minutes. Add scallions. Spread wine mixture over chicken. Season with salt and pepper. Drizzle lime juice, lime zest, parsley and crumbs. Dot with 1 tablespoon butter. Bake on top 1/3 of oven for 15 minutes or until chicken is white through and still juicy.
