4 slices of bacon 2 c of shredded,cooked potatoes 1/4 c chopped onion 1/4 c of green pepper 4 eggs 1/4 milk 1/2 t salt dash of pepper 1 c sharp shredded American cheese
Cook bacon and set aside. Mix potatoes, onion, green pepper and pat into a large greased pan.Cook on low heat until underside is brown. Blend eggs, milk, salt, and pepper, and pour over potatoes. Top with cheese and bacon, cover , and cook slowly. Loosen and fold in half.
