25-30 Mangoes, 500gms dates, 500gms raisins, 1 bulb garlic, 500gms ginger, 12 birds eye chillies or 1 tsp cayenne pepper, 1kgs brown sugar, 1 tbsp salt, 2 x 750ml Vinegar.

Chop all of the fruit then make syrup with vinegar and sugar. Next add the sliced mango and other ingredients plus rest of vinegar, Boil for 2 to 3 hrs. Bottle in sterilized jars and seal.
