Guavas, Water, Sugar, Lemon Juice

Directions:

Chop Guavas roughly, weigh and for every 500gms of fruit add 125mls of water. Bring to the boil, simmer 2 hours with lid on. Let drip overnight through a jelly bag. Measure liquid and for every 6 cups of liquid add 6 cups of sugar and 1 cup of lemon juice.
Put guava juice and lemon juice into a pan and bring back to the boil. When boiling, stir in sugar. When sugar has dissolved boil (MUST BE A RAPID BOIL SO WATCH CAREFULLY) until it jells when tested (approx 1/2 hour). Pour into sterilized bottles and Seal
