Approximately 8 cups of Chopped Mango
1 cup Lemon Juice

Use Bowen or similar mango that is not stringy. Peel and Chop ripe Mangoes into around 3cm pieces. Put into a large pot with 1 cup of Lemon juice. Cook over a moderate heat until Mango has broken down, and is soft and mushy. Measure the mango mix and add cup for cup of white sugar. Bring to the boil and reduce heat to a simmer. Cook for around 15-20 mins until mix starts to "pop". Pour out into sterilized glass jars, cover with cling wrap and close lid while still hot. Leave overnight to set.

This is a very simple jam to make and can be used as a dessert for topping on ice cream or on your toast. My kids loved it as a topping for cheesecakes, Pavlova and in Butterfly cupcakes. I also use it as a marinade on Pork before cooking on the bar-b-que.
