1 lb thin sliced boneless Chicken Breast House Seasoning (see recipe in "Marinades and Rubs Section") Grilled Eggplant (see recipe in "Vegetables and Side Dishes Section") Roasted Red Peppers (see recipe in "Vegetables and Side Dishes Section") Grilled Asparagus (see recipe in "Vegetables and Side Dishes Section") Chiabatta loaf or rolls Fresh Mozzerella Balsamic Vinegar Olive Oil
Over med-high heat saute chicken seasoned with House Seasoning and in pan with olive oil about 3 minutes per side.
Slice Chiabatta loaf or rolls and layer chicken, eggplant, peppers, asparagus, and fresh mozzarella.
