Eggplant
Balsamic Vinegar
Olive Oil
Kosher Salt
Ground Black Pepper

Directions:
Directions:
Peel and slice Eggplant lengthwise in 1/2 inch thick slices

Lightly salt and pepper the eggplant slices

Coat each side with Balsamic Vinegar and drizzle with Olive Oil

Grill on outdoor or indoor grill until grill marks appear and eggplant is soft but still holds shape.

Serve as a side vegetable or as layer on the Italian Chicken Sandwich (see recipe in the "Poutry Section")
