2 cups jasmine rice
1 14 oz. can light coconut milk
1 T. plus 1 1/2 tsp. sugar
1 t. salt

Directions:
Directions:
Place the rice, 2 cups of water, coconut milk, sugar and salt in a medium saucepan and stir to combine. Bring to a boil, then reduce heat to medium low and simmer, stirring occasionally so that the rice doesn't stick to the pan, until the water has evaporated to just below the level of the rice. Reduce heat to lowest setting, cover the pan, and continue to cook until rice is tender 20 - 25 minutes.
