1 ham hock
4 c. water
16 oz. dried garbanzo beans (or 1 14-oz. can)
2 or 3 potatoes, cut into bite-sized pieces
1 lg. Spanish onion, chopped
1 each red, green and yellow bell peppers, chopped
2 green banana peppers, chopped
2 cloves garlic, minced
2 T. olive oil
1 12-oz. pkg. smoked pork shoulder
1 pkg. Vigo Flavoring and Coloring
dash of hot sauce, paprika and saffron (optional)
salt and pepper to taste

Directions:
If using dried beans, soak overnight. Drain and rinse. In a large pot, boil ham hock in water. Add beans and potatoes to pot with ham hock. Bring to boil. Saute onions and peppers in olive oil along with garlic. Add onions, peppers, garlic and all other ingredients to pot. Lower heat to simmer, cook until beans are tender, about 1-2 hours. Add more water as necessary. Remove ham hock. Serve with Cuban or French bread.
