6 eggs, slightly beaten
1 cup orange juice
1 cup skim milk
1/4 cup sugar
1/4 tsp. ground nutmeg
1/2 tsp. vanilla extract
1 tbsp. orange zest
1/4 cup orange liqueur (optional)
10 slices cinnamon raisin bread (or can use French or Italian)
4 tbsp. butter
1/2 cup pecan pieces

1. With wire whisk, beat together eggs, orange juice, milk, sugar, nutmeg, vanilla, orange zest and orange liqueur. Place bread in a snug single layer In a casserole. Pour mixture over bread. Dot with butter cut into small pieces. Cover and refrigerate overnight, turning once.
2. Preheat oven to 350º. Bake until golden, about 30 to 35 minutes or until puffed and set. Serve with maple syrup or butter and orange marmalade melted together in the microwave.
